Grilled Four-Cheese Sandwich with Tomato-Ginger Soup

INGREDIENTS:
Tomato-Ginger Soup:
- 30 ml olive oil
- 300 g onion
- 50 g garlic
- 1 ea. bay leaf
- 400 g chopped roast tomato
- 500 ml vegetable stock
- 430 g Knorr Tomato Pronto
- 400 ml heavy cream
- 45 g sugar
- 15 g ginger
- 5 g cumin
- 1 g chili flakes
- 1 g cayenne pepper
- 10 ml lemon juice
- 5 g salt
- 2 g black pepper
Grilled Cheese Sandwich:
- 40 g white bread
- 5 g Mozzarella Cheese
- 5 g Parmigiano-Reggiano Cheese
- 5 g Cheddar Cheese
- 5 g Emmenthal Cheese
- 5 g butter
- 2 g salt
- 1 g black pepper
Salted Egg Béchamel:
- 60 g butter
- 1 L milk
- 50 g flour
- 3 g Knorr Salted Egg Powder
- 1 g green onion, chop
- 1 g curry powder
- 1 g chili
- Pinch of salt and pepper
STEPS:
1. Soup: Heat oil in a pot. Sauté onion and garlic until fragrant, for about 5 minutes. Add bay leaf, chopped tomato, vegetable stock, and Knorr Tomato Pronto, letting it simmer for 15 minutes. Lower the heat, then add cream, sugar, ginger and all spices. Let it simmer for another 10 minutes. Remove bay leaf and blend until smooth. Mix in some lemon juice and season to taste, blend again briefly and set aside.
2. Grilled Cheese Sandwich: Cut two slices of bread, and butter it on the outer side. On one of the slices, spread the salted egg béchamel on the inner side, then lay the four cheeses—mozzarella, Parmigiano-Reggiano, cheddar and Emmenthal cheese. Put on a grill pan to brown the butter and get criss-cross grill marks. Serve with the tomato-ginger soup.
3. Plating: Garnish soup with olive oil, cream and chop parsley/tarragon. Cut the sandwich into two and lay it beside the soup.
