Long Salted Egg Fries

INGREDIENTS:
- 250 g Knorr Mashed Potato Flakes
- 750 ml hot water
- 75 g all-purpose flour
- 25 g corn starch
- 5 g Knorr Salted Egg Powder
- 2 g salt
Salted Egg Béchamel:
- 60 g butter
- 1 L milk
- 50 g flour
- 3 g Knorr Salted Egg Powder
- 1 g green onion, chop
- 1 g curry powder/ 3 ea. curry leaves
- 1 g chili
- Pinch of salt and pepper
STEPS:
1. In a cooking pot over medium-high heat, pour in the hot water and add the Knorr Mashed Potato Flakes. Stir until the mixture is thick enough to form a ball.
2. Press the mashed potato ball through a long French Fries cutter to create long tube-like shapes. Fry in oil at 180C until golden brown. Sprinkle with Knorr Salted Egg Powder and salt.
3. Salted Egg béchamel: Sauté chili, green onion, Knorr Salted Egg Powder and curry powder in a pan. In a bowl, whisk in milk and butter. Pour in the pan and let it simmer. Add flour, then whisk until the mixture thickens, and strain. Pour the béchamel into the pan, taste and season as needed.
4. Plating: Scatter long fries messily on a board and pour the sauce generously over fries.
