Preparation

  1. Shrimp Noodle

    • Bake the shrimp shells at 120°C for 2 hours, then blend until smooth after cooling.
    • Mix the shrimp noodle ingredients, let rest for 1 hour in the chiller.
    • Mix the dough again, let rest for another hour, then shape some into noodles and the rest into fried wontons.
    • Mix the shrimp broth ingredients, cook for 2 hours, then strain.
  2. Shrimp Broth:

    • Cook the onion oil at 100°C for 1 hour until the onions are browned, strain, and add sesame oil after cooling.
  3. Salty sauce:

    • Mix the salty sauce ingredients.
  4. Chili oil shrimp:

    • Cook the oil aroma ingredients at 100°C for 1 hour until the onions are browned, strain.
    • While hot, pour into dried chili flakes, then add Knorr Rostip, black vinegar, and dried shrimp powder.
  5. Melinjo Shrimp Topping:

    • Sauté the shrimp, add chili oil, melinjo skins, long beans, and oyster mushrooms.
  6. Accompaniments:

    • Pour into a bowl, add 3 gr salty sauce, 3 gr onion oil.
    • Boil the noodles at 100°C for 1-2 minutes, then place in a bowl, mix well, add toppings, fried wontons, shrimp broth, and accompaniments.
