How to Make Fried Dumpling :

  • Medium Protein Flour 400.0 g

How to Make Dumpling Sauce:

  • Water 200.0 ml
  • Granulated Sugar 75.0 g
  • Salt 4.0 g
  • Tomato Sauce 55.0 g
  • Worcestershire Sauce 1.0 tbsp
  • tapioca solution 1.0 tsp

Preparation

  1. How to Make Fried Dumpling :

    • Mix Medium Protein Flour, salt, double act baking powder, and margarine, stir, then add eggs until the mixture has texture, stir with a mixer, then compact and let rest while wrapped in plastic wrap for one hour.
    • Prepare the tapioca flour for the dusting process with a napkin, then coat the tapioca flour over the dough that has been cut into several pieces.
    • Roll out the dough until it is thin, then cut the dumpling skin into 12 cm squares.
    • For the filling, mix ground chicken thighs, ground shrimp, minced garlic, salt, pepper, fish sauce, sesame oil and egg white. Stir the mixture and add the tapioca flour.
    • Put the filling mixture into the dumpling skin, fold it with the egg yolk as adhesive.
    • Fry the dumpling skin at 160 degrees Celsius until golden.
  2. How to Make Dumpling Sauce:

    • Boil water, add sugar, salt, tomato sauce, Worcestershire sauce, then pour in the tapioca solution little by little until it thickens.
    • Fried dumplings are ready to be served with special dumpling sauce!
