Preparation

  1. How to Make Napinadar Chicken:

    • Marinate the chicken with lime juice and salt. Let it sit for 10 minutes.
    • Grill the chicken on a grill pan until the surface is dry and browned. Set aside. 
    •  Heat oil in a pan, sauté the spice paste, kaffir lime leaves, galangal, and lemongrass until fragrant. 
    •  Add the roasted coconut and water. Stir well and bring to a boil. 
    •  Add the chicken, stir well. Cook on low heat until the chicken is tender and the liquid reduces. Remove and serve immediately.
