  1. How to Make Sore Fried Chicken:

    •  Prepare all ingredients, wash thoroughly, cut the chicken into 4 pieces, and set aside.
    •  Blend all marinade ingredients until smooth, then adjust seasoning. 
    •  Marinate the chicken in the spice paste until well-coated, for at least 2 hours.
    • Heat oil and fry the remaining marinade until browned, then drain and cool.
    •  For the sambal, remove the central stem of the kaffir lime leaves, blend all ingredients until smooth, then strain. 
    •  Heat oil and fry the chicken until cooked and golden brown, then drain.
    •  Serve the evening fried chicken with sambal and other accompaniments.
